first thoughts: Sixty10 Organic Rotisserie Chicken | Little Haiti (Miami)
In the kitchen, unitaskers are anathema. All those avocado slicers and egg peelers and meat shredders just do the same things you can do with standard kitchen tools while taking up extra space in your drawers. As Alton Brown used to say on Good Eats, "The only unitasker allowed in my kitchen is a fire extinguisher."
When it comes to restaurants, though, I'm a big fan of unitaskers. Focus on just one thing, and you're more likely to do it well. Case in point: Sixty10 Organic Rotisserie Chicken, recently opened in Little Haiti. There are several items on the menu at Sixty10, but they are all essentially variations on one theme: chicken, rubbed with salt and spices, and cooked on a rotisserie until its skin is well-bronzed and its flesh pulls apart in soft, juicy ribbons. It may come as a whole, half or quarter chicken, along with a few different sandwich or salad iterations, but it's all about the bird. And happily, it's a really tasty bird.

On a first-time lunch visit last week, I got the Sixty10 sandwich: pulled rotisserie chicken meat, a tangle of caramelized onions, coins of fingerling potatoes slippery with chicken jus, all smooshed inside a kaiser roll It was simple, straightforward, and delicious. The seasonings are subtle, not overpowering; it tastes like chicken, but actually like chicken, not just a bland blank canvas. Having said that, a smear of mustard or a daub of hot sauce would probably do it wonders.
I'll have to make a return visit to bring a whole roasted chicken home for the family, which can be had with two sides (options include those roasted potatoes, a creamy, tangy cole slaw, brussel sprouts or green beans) and two sauces (could be jalapeño jam, curry sauce, or pikliz, a nod to the Little Haiti neighborhood, among others) for $34. That's about 50% more than you'd pay for a commodity chicken family meal at Pollo Tropical and it's probably about 200% better.
There's not much to the place right now, which used to be a Haitian Creole take-out joint: a window into the kitchen where you place your order, a covered patio with some tables and benches if you want to "dine in." But there's a huge, sprawling yard out back, partly shaded by live oaks spreading their branches over from the neighboring property, and the owners have bigger long-term plans: live music (a stage is already set up), a chickee hut (plans have been filed with the city), wine and beer in a picnic-style atmosphere (there's no liquor license yet, so for now they're sometimes pouring wine for free).

best thing i ate last week: fried chicken sandwich at La Pollita
There's yet another wave of taquerias opening in Miami these days, so many I've given up even trying to list them, much less sample them all. But last week I did stop in on La Pollita, which is currently operating from a trailer parked in the Midtown Garden Center. The backstory is intriguing: chefs Luciana Giangrandi and Alex Meyer worked at some pretty highfalutin places before this: Eleven Madison Park (just named as "World's Best Restaurant" by the suspect but influential 50 Best list), its sibling the NoMad, Scarpetta in Manhattan, Animal in L.A. Which made me wonder – what are these folks doing running a taco truck?
Making really great food, it turns out. They've got a short list of tacos, served on fresh tortillas pressed from masa supplied by Miami masa maestro Steve Santana (of Taquiza), and the cochinita pibil I tried was very good. But the standout item was the fried chicken cemita. A hot, crispy, juicy tranche of fried chicken. A crunchy, vinegar-laced, herb-flecked cabbage slaw. A dollop of mashed avocado for some richness. A creamy, mildly spicy Valentina aioli. A sesame-seed flecked bun with just the right heft: substantial enough to be a meaningful component of the sandwich composition and to keep everything together until the last bite; but not so much as to overwhelm the stars of the show. It is just about perfect, and was the best thing I ate last week.

30 Great Things to Eat in Miami for Less than $11
A disproportionate amount of my time and energy writing here is devoted to higher end dining (leading some people to think I actually eat that way all the time!). Yes, there's a lot more glamour in a fancy tasting menu than in the average daily meal. But not necessarily more satisfaction.
And as Miami rapidly becomes an increasingly expensive place to live, there's a particular joy when that satisfaction comes cheap. As we enter the season of Miami Spice, when everyone goes scrambling to sample all the $39, 3-course dinners, this year I decided to do something different.
So forgive me for the click-bait title, but here are thirty great things to eat in Miami[1] all of them under $11.[2] A few of these come from Miami's most celebrated chefs and restaurants. Others come from places with no websites or social media managers, made by cooks whose names I will never know. Many are not terribly Instagram-friendly. What they all have in common is that they make me very happy when I eat them.
Though it was not my original purpose, and though it's obviously skewed somewhat by my own personal predilections,[3] I suspect this list might just give a more complete picture of our city than the latest restaurant "hot list" – not just the million dollar dining rooms in the South Beach and Brickell towers, but the many Latin American and Caribbean and other flavors that give Miami its – well, flavor. I'm always gratified to see exciting things happening in the Miami dining stratosphere; but there are good things closer to the ground too. Here are some of them.
1. Pan con Croqueta ($10)
I wrote recently about All Day, and won't repeat myself here. Instead, I'll mention something that only occurred to me in retrospect: how comfortably it traverses the territory between new school coffee house and old school Cuban cafecito shop. Sure, the coffee beans are a lot better than the regulation-issue Bustelo or Pilon, and they don't need to put an avalanche of sugar into an espresso to make it taste good, but there's not as much space as you might think between a fancy Gibraltar and a humble cortadito. All Day even has a ventanita where you can order from the sidewalk. And, they've got an excellent version of a pan con croqueta, with warm, creamy ham croquetas and a runny, herb-flecked egg spread, squeezed into classic crusty pan cubano.

2. Croqueta Sandwich ($5.90)
If All Day offers a new-school version of a pan con croqueta, the prototype can be found at Al's Coffee Shop, hidden away inside a Coral Gables office building. Despite the obscure location, it's usually full of police officers and municipal workers, who know where to find a good deal. The croqueta sandwich here starts at $4.65; you can add eggs for an extra $1.25. Bonus points: on Tuesdays, those excellent croquetas are only 25¢ apiece all day.

For as long as I've been in Miami – which is a long time – B&M Market has been open along a dodgy stretch of NE 79th Street. Run by a sweet, friendly Guyanese couple, this Caribbean market with a kitchen and small seating area in back turns out fresh rotis, staples like braised oxtails, jerk chicken, cow foot stew, and my favorite – the tender, deeply-flavored curry goat. A small portion, with rice and peas and a fresh salad, is plenty, and will set you back $10 – or go on Thursday when it's the daily lunch special, and it's only $7.

best thing i ate last week: philly cheesesteak at Philly Grub
When I was in high school a long, long time ago, I worked one summer at a place called All American Heroes in the Aventura Mall food court. (It happened to be in the same space that was occupied by the gastroPod for a brief time last year). It offered the usual assortment of cold cut subs you'd find at any Subway wanna-be, but the real specialty of the house was the Philly cheesesteak. By the end of that summer, I fancied myself a legitimate cheesesteak-slinger, and had gotten pretty adept at that double-spatula chopping action on the flat-top.
You'd think that after having cooked countless hundreds of them, I'd also be absolutely sick of cheesesteaks. But that moment never came. At the end of my shift I'd still happily make myself one – usually with provolone, sometimes mushrooms (I was fancy even then) – and enjoyed it every single time.
So I was intrigued when I saw signage going up for a place called "Philly Grub" on a, well, pioneering stretch of NW 54th Street in Little Haiti that's often part of my daily commute. It opened a few months ago, but its hours (11am-6pm Mon-Sat, 11am-5pm Sun) never coincided with mine. I finally made it in this weekend, and was reminded of what I loved about that summer: the cheesesteaks.

There's not much to the place: a counter to take your order, a couple tables, a ledge around the wall with some stools. And there's not much to the menu either: your basic Philly cheesesteak, with a few options (Whiz, provolone or American; onions, peppers, mushrooms, lettuce, tomato and pizza sauce if you wish), along with a chicken cheesesteak, a vegetable Philly, plus sausage, meatball, and Italian cold-cut hoagies. But you'll appreciate the bare bones approach when you see that all the sandwiches are $7.76. Sides – Penn-Dutch style potato salad, a pretzel, or chips – will set you back an extra $1.76, or you can splurge on the pierogies with grilled onions and sour cream for $2.76. For Philadelphia nostalgists, there's also Italian water ices and TastyKakes for dessert.
It is a finely crafted sandwich that you'll get for your $7.76. The beef is tender, well-seasoned and cooked through – still juicy, not entirely dried out, but not sopping its way through the bread before you can finish. For tradition's sake, I abandoned the fancy pretensions of my youth and got crazy with the Cheez Whiz; there's a reason for those traditions sometimes. It comes on a real-deal Amoroso roll, with just the right balance of crusty and tender, like Peter Falk in Princess Bride.
That cheesesteak wasn't just the best thing I ate last week; it was almost as good as the ones I used to make.

first thoughts: Doce Provisions | Little Havana (Miami)
I'd been meaning to ask Burger Beast, who is my expert on such things, what was his favorite Cuban sandwich in Miami. Then I found myself driving through Little Havana on the way back from court yesterday, and may have come up with my own answer to that question.
Doce Provisions is a pocket-sized restaurant on SW 12th Avenue, just a couple blocks north of Calle Ocho. (The spot used to be Alberto Cabrera's Little Bread). There's not much to it: a few tables, a counter along the wall lined with stools, and an open kitchen, though a roomier patio in back provides outdoor seating if weather permits. The menu is pretty tight too: the centerpiece is five varieties of sandwiches, bookended by several appetizer type items "para picar," and five bigger "family meal" options, all available in small or large portions.

The crumbly exterior of Doce's croquetas encases a filling of Miami Smokers[1] chorizo bound in a molten bechamel sauce. These would hold up well in a croqueta showdown with just about any others in town, save maybe Michelle Bernstein's ethereal versions. At $5 for four pieces, that's not too shabby. And while a "mostaza" dipping sauce tastes more of mayo than mustard, a delicate little side salad of frisée and slivered pickled peppers provides exactly the zing I was looking for.
It's a solid opening act to the main event: Doce's El Cubano. This Cuban sandwich is unorthodox in several respects. There's thin-sliced smoked pork loin and cured soppressata here, versus the traditional roast pork and ham.[2] The bread is neither the customary, flaky Cuban bread nor the sweet, eggy medianoche variation, but lies somewhere in between: the crumb more tender than the former, the crust a bit more substantial than the latter.

travelogue: three days of eating (and other things) in and around Memphis, Tennessee
Despite getting to do my fair share of traveling, there are still huge swaths of this country I've never seen. With all of the family together over winter break, I aimed to make a small dent in the long list of "Places I Haven't Been" with a week-long, three-city trek that started in Memphis, Tennessee. As always, my pre-trip research resulted in a list of places to visit about five times longer than could possibly be achieved in the time we had. To see the complete list and plot your own adventure, click on this Memphis / Nashville / Louisville google map. Here's where we ate, with a few inedible highlights along the way.
If I knew one thing about Memphis food before this trip, it was dry-rub ribs. And if I knew one place to get them, it was Charles Vergos' Rendezvous, a nearly 70-year old restaurant downtown where you enter through a back alley and head downstairs into the basement. The ribs here are swabbed with a vinegar and spice mop, cooked over hot charcoal, then dusted with a heavy shower of dried spices. Except for a small puddle of the meat's own juices, there's not touched by any sauce, though there are a couple squeeze bottles on the table. These are not your fall-off-the-bone kind of ribs; they've still got some traction, matching the assertive flavors of pork and spice.
It's not your typical barbecue (in fact some might say it's not barbecue at all), and the place has a little bit of a tourist trap feel to it, but I've had plenty worse ribs than these. I was also fond of their slaw, which had a pronounced yellow mustard kick, and am grateful to Allison Riley for counseling me not to miss the simple pleasures of a sausage and cheese appetizer plate.

Our first night in Memphis found us at The Second Line, a New Orleans inspired restaurant from Chef Kelly English. The Louisiana-born chef first started cooking professionally in New Orleans with culinary godfather John Besh, then made his way to Memphis to open his first spot, Restaurant Iris, in 2009. A few years later he opened The Second Line, a more casual place featuring lots of Big Easy staples, right next door to the fancier Iris.[1]
What better way to start an evening than a sazerac? Followed by some New Orleans-style BBQ shrimp (with a shout-out to English's mentor: "Besh's BBQ Shrimp") and a nice loaf of French bread? All that was missing was, alas, my favorite part: the shrimp's heads. When I'd order these at Mr. B's Bistro in New Orleans or Red Light in Miami, I'd give Mrs. F all the meat and just suck on all the heads.[2]
English's fried gulf oyster poboy, dressed with lettuce tomato mayo and pickles, was as good as any I've had in New Orleans (seen up close in cross-section here), with a hearty sidecar of red beans and rice. And while much of the menu consists of several other varieties of poboys, there's also a good beet and feta shwarma, and even a "reasonably healthy dinner salad" if you had ribs for lunch and don't see a fried oyster sandwich as an exercise in moderation.
For our first night in town, this hit all the right spots.

Much like eating dry-rub ribs, you can't go to Memphis and not go to Beale Street. This three-block stretch, with a history as an entertainment district stretching back to the 1800's, feels a bit like a low-budget Bourbon Street. It has its share of kitsch, but it also has its share of charm. I couldn't figure out why I was hearing an extra horn line over the recorded music coming from one of the bars until I spied a wandering trumpeter playing as he walked down the sidewalk.[3] And a troupe of street gymnasts used Beale as the stage for an impressively athletic series of flips, culminating in this high air in front of the 140-year old A. Schwab Trading Co. store.

a weekend of eating (and other things) in Chicago
The idea was to break up the long hot summer by spending the weekend someplace cooler than Miami. Of course, our visit to Chicago coincided with a heatwave that brought 90 degree temperatures right along with us. So that part didn't go as planned.
My last brief visit to Chicago focused mostly on high-end dining – Alinea (pictures here) and the now-closed L2O (pictures here), though I also managed to squeeze into a seat at Au Cheval (pictures here) and snag one of their awesome burgers. But this trip was planned on fairly short notice, too late to book seats at a couple other places high on my to-do list: Grace and 42 Grams in particular.
So the question was, where to go in Chicago where we could book a table on about a week's notice?[1] I aimed a bit lower and made reservations at a couple newer additions to Chicago's dining constellation – Salero and Momotaro – as well as a place I've been hoping to try for a couple years, Trenchermen.
Other than the weather, it all worked out pretty well. Here's a brief travelogue of where we went and what we did.
Our very first stop was at the Broken Shaker (see all my Broken Shaker pics here), a newly opened Chicago outpost of Miami's craft cocktail bar in the Freehand Hotel. I may have brought the Miami weather with me, but the Bar Lab boys, Elad Zvi and Gabriel Orta, seem to have brought all the rest of the Magic City to the Windy City.[2] They've done an uncanny job of capturing the look and feel of the original bar in the old 1930's era Miami Beach Indian Creek Hotel. They get the drinks right too, with some Miami staples (Cocoa Puff Old Fashioned) mixed in with some Chicago-inspired cocktails. A Devonshire Fizz, with Rare Tea blood orange scented green tea, Campari, grapefruit soda, vermouth and Milagro tequila, took the edge off a steamy Chicago afternoon. We even ran into Elad at the bar, a day before he headed to New Orleans for Tales of the Cocktail and picked up a well-deserved award for Best American Hotel Bar for Shaker Miami.

From there, we headed to dinner at Salero (see all my Salero pics here), a Spanish restaurant which opened about a year ago in the West Loop, which is becoming Chicago's restaurant row. The chef is Ashlee Aubin, an alumnus of (now-closed) Zealous and Alinea who also runs the kitchen at Wood. At Salero, Aubin mixes old and new, with lots of Basque influences in particular on display.
Though Spanish often means tapas, Salero's menu eschews the now-ubiquitous "small plates" format for more traditional appetizers ("entradas") and entrées ("platos fuertes"). Still, there is also a bar menu of pintxos (the Basque tapas equivalent) which, if you ask nicely, you can also avail yourself of in the dining room. It was from there that we ordered a couple "Gildas," a simple and wonderful pintxo of anchovies, manzanilla olives and guindilla peppers found throughout San Sebastian and Bilbao.[3] Also from the pintxos menu, a sampling of Spain's outstanding "conservas," or canned seafood products: berberechos (cockles), served simply with bread, butter and lemon, and still tasting like they were straight from the sea.
A variation on calçots looked to the Catalan instead of the Basque country for inspiration; the brick-red, mildly spicy romesco sauce was right on target, but the grilled spring onions were all crispy greens and none of the tender, sweet whites that are the highlight of the traditional dish.[4] A rabbit terrine looked somewhat sloppy and disheveled, but I would have ordered anything that came with the excellent cheese-stuffed, tempura-fried padron peppers that accompanied it. And I loved Salero's modernized version of callos a la madrileña, which was the Best Thing I Ate Last Week (last week).

The following morning we headed up to Lincoln Park, where the Green City Market hosts a Saturday farmers market. We grabbed a pint of some Michigan berries from Mick Klug Farm and a buttermilk doughnut from the Doughnut Vault truck parked along the street and had our breakfast on a park bench.
Just down the street is the Chicago History Museum, which had a fantastic exhibit of photos by Vivian Maier, a nanny for several Chicago families who in her spare time took pictures all around the city during the 1950's through 1970's. This was really a stunning exhibit with an odd backstory. Maier apparently didn't show her photographs to anyone during her lifetime, and at some point in her life, a storage locker with thousands of negatives was auctioned off after being seized by a landlord. In 2007 the negatives were discovered in a thrift auction house and finally made their way to the public eye.[5]
We wound up back in the West Loop for lunch, and after poking our noses into Stephanie Izard's Little Goat Diner (one hour wait) and Au Cheval (three hour wait!), I grabbed a sandwich at Cemitas Puebla instead. I'd never had a proper cemita before and my expectations were high – perhaps too high. I went with the milanesa, and it was a good, satisfying $8 lunch, but nothing that changed my life in any meaningful way. Nice crispy, juicy pork loin, on a nice puffy, crusty-shelled roll, but it had too much cheese, not enough avocado, and barely a whisper of any chipotle sauce. I doctored it with the tableside salsas, but it wasn't enough to make any magic.

For dinner, we headed over to Wicker Park, past the teeming hordes filling the outdoor patio and stuffing their faces with tacos at Big Star, and around the corner to the somewhat more sedate Trenchermen (see all my Trenchermen pictures here). The entrance looks like a Victorian scientist's cabinet of curiosities, with terrariums mounted on the wall and shelves stuffed with odd knick-knacks. Down a half-flight of stairs, you'll find yourself in the lengthy bar, which occupies a space that used to be a Russian bathhouse and still feels a bit like it, with white subway tiles lining the walls of the subterranean space. The dining room occupies a parallel room dominated by huge octagonal lights that look like they were poached from a Frank Lloyd Wright project.
The food, from Chef Pat Sheerin,[6] is equally eccentric, often referencing multiple cuisines at once, even on the same plate. Notwithstanding the heartiness suggested by the restaurant's name, most dishes tread pretty lightly. The menu is divided into sections for cold and warm starters and then mains, but a four-course prix fixe option lets you choose two starters, a main and a dessert, which is about the right amount of food.
Salt and pepper squid, served over a salad of cubed eggplant and cucumber with spicy chiles, felt Asian and Middle Eastern at the time, sichuan peppercorn bringing that tingly "ma la" sensation, cumin vinaigrette adding that warm B.O. funk. That may not be the most appetizing description, but it was a delicious dish. A plate of grilled carrots paired with English pea falafel balls and an orange and olive oil "jam" also tasted like it had blown through the Mediterranean on its way to the table. A salad of kale and pickled escabeche vegetables napped with an avocado goddess dressing and sprinkled with toasted pumpkin seeds felt appropriately virtuous.
If Trenchermen has a signature dish, it may be the "pickle tots" – a mash-up of tater tots and fried pickles, served with a hot pink yogurt infused with dehydrated red onion, and ribbons of cured and smoked chicken "bresaola" (you can watch the Sheerin brothers prepare the dish here). I can see why they'd have trouble taking it off the menu – it's a great dish, simultaneously contemporary and nostalgic.
While you can go meaty at Trenchermen, with a double burger, beef shoulder, or leg of lamb, it's also a vegetarian-friendly place, with not one but two plant-based main course options. Wanting to eat light, we tried both. I preferred the toasted oats with mapo tofu, the tofu dusted with powdered chiles in a bowl rounded out with lentils, eggplant and toasted almonds. The roasted broccoli, with vadouvan spice, sprouted black chickpeas, a broccoli and hemp seed hummus and hoisin sauce, was not as good, the broccoli a bit woody and tough, the spicing a bit too mild-mannered. But the dessert – a Basque cake, served over an almond crumble and a smear of lemon curd, and crowned with a scoop of olive oil poppy seed ice cream – more than made up for it. I don't usually get that excited over cake, but this one, crusty on the outside and custardy within, was exciting stuff.

My last brief visit to Chicago focused mostly on high-end dining – Alinea (pictures here) and the now-closed L2O (pictures here), though I also managed to squeeze into a seat at Au Cheval (pictures here) and snag one of their awesome burgers. But this trip was planned on fairly short notice, too late to book seats at a couple other places high on my to-do list: Grace and 42 Grams in particular.
So the question was, where to go in Chicago where we could book a table on about a week's notice?[1] I aimed a bit lower and made reservations at a couple newer additions to Chicago's dining constellation – Salero and Momotaro – as well as a place I've been hoping to try for a couple years, Trenchermen.
Other than the weather, it all worked out pretty well. Here's a brief travelogue of where we went and what we did.
Our very first stop was at the Broken Shaker (see all my Broken Shaker pics here), a newly opened Chicago outpost of Miami's craft cocktail bar in the Freehand Hotel. I may have brought the Miami weather with me, but the Bar Lab boys, Elad Zvi and Gabriel Orta, seem to have brought all the rest of the Magic City to the Windy City.[2] They've done an uncanny job of capturing the look and feel of the original bar in the old 1930's era Miami Beach Indian Creek Hotel. They get the drinks right too, with some Miami staples (Cocoa Puff Old Fashioned) mixed in with some Chicago-inspired cocktails. A Devonshire Fizz, with Rare Tea blood orange scented green tea, Campari, grapefruit soda, vermouth and Milagro tequila, took the edge off a steamy Chicago afternoon. We even ran into Elad at the bar, a day before he headed to New Orleans for Tales of the Cocktail and picked up a well-deserved award for Best American Hotel Bar for Shaker Miami.

From there, we headed to dinner at Salero (see all my Salero pics here), a Spanish restaurant which opened about a year ago in the West Loop, which is becoming Chicago's restaurant row. The chef is Ashlee Aubin, an alumnus of (now-closed) Zealous and Alinea who also runs the kitchen at Wood. At Salero, Aubin mixes old and new, with lots of Basque influences in particular on display.
Though Spanish often means tapas, Salero's menu eschews the now-ubiquitous "small plates" format for more traditional appetizers ("entradas") and entrées ("platos fuertes"). Still, there is also a bar menu of pintxos (the Basque tapas equivalent) which, if you ask nicely, you can also avail yourself of in the dining room. It was from there that we ordered a couple "Gildas," a simple and wonderful pintxo of anchovies, manzanilla olives and guindilla peppers found throughout San Sebastian and Bilbao.[3] Also from the pintxos menu, a sampling of Spain's outstanding "conservas," or canned seafood products: berberechos (cockles), served simply with bread, butter and lemon, and still tasting like they were straight from the sea.
A variation on calçots looked to the Catalan instead of the Basque country for inspiration; the brick-red, mildly spicy romesco sauce was right on target, but the grilled spring onions were all crispy greens and none of the tender, sweet whites that are the highlight of the traditional dish.[4] A rabbit terrine looked somewhat sloppy and disheveled, but I would have ordered anything that came with the excellent cheese-stuffed, tempura-fried padron peppers that accompanied it. And I loved Salero's modernized version of callos a la madrileña, which was the Best Thing I Ate Last Week (last week).

The following morning we headed up to Lincoln Park, where the Green City Market hosts a Saturday farmers market. We grabbed a pint of some Michigan berries from Mick Klug Farm and a buttermilk doughnut from the Doughnut Vault truck parked along the street and had our breakfast on a park bench.

first thoughts: Niu Kitchen - Downtown Miami
About a month ago I stumbled across a short blurb on Eater for a "new Catalan-inspired eatery" that had opened in downtown Miami: Niu Kitchen. "A little intriguing," I said. Then several good reports came back from folks who had visited. A couple weekends ago, I finally made made it in to see for myself.

Niu Kitchen turns out to be a shoebox-sized restaurant squeezed into a small space in a central but nondescript stretch of downtown Miami, a block south of the Miami-Dade College campus. Seating maybe twenty five, it was clearly decorated on a tight budget but succeeds in feeling both homey and contemporary, with its reclaimed wood paneled walls and exposed bulbs hanging from the ceiling.
It also turns out to not just be "Catalan-inspired," but the actual real deal. Chef Deme Lomas was a chef in Barcelona (I believe this is the place) before making his way to Miami, where he first found work as a line cook at Barceloneta, then joined Niu Kitchen. His menu mixes traditional Catalan dishes like trinxat ($10), a potato and cabbage pancake bearing an uncanny similarity to the classic English "bubble and squeak," topped here with butifarra sausage and pancetta, with more extemporaneous items like his gamba tartare ($13), a mince of translucent, sweet shrimp over diced tomatoes and confited potatoes, presented with the shrimp's head so you can squeeze its juices onto the dish.

Spiceonomics - Navigating Miami Spice, 2013 Edition
With August upon us, it's that time once again: Miami Spice. Now in its twelfth year, Miami Spice remains something of a culinary version of Russian Roulette: you might have a very good meal that's a great value at a restaurant that's excited to offer it to you; or you might have a mediocre meal that's not very different from the restaurant's regular prices, served by a resentful and begrudging waitstaff who are not impressed by your 15% tip on a $33 per person tab.
How to tell the difference? Over the years I've repeatedly proposed and refined three basic rules by which to approach Miami Spice:
(1) there's no reason to bother with restaurants where the Spice menu is not a meaningful discount from their regular prices (though, by all means, go to them if you like them; just don't do so because they're offering a Miami Spice menu);
(2) the infamous chicken breast / farmed salmon / churrasco (or substitute short rib) "trifecta" is usually a tell that a restaurant doesn't have its heart in it; and
(3) look for food that actually interests you. If a restaurant doesn't excite you the other ten months of the year, it is unlikely there's going to be something really inspiring on their Spice menu.
To those three basic rules I would add a couple corollaries:
(a) Tip on the value of the meal, not the price. If you're dining at a place where the Spice menu is a meaningful discount from their usual going rate - i.e., if your $33 meal would normally cost $50 - be a sport and drop a $10 tip. The servers are working just as hard as ever.
(b) There's no rule that everyone at the table has to order the Spice menu. (Well, except at some places like Pubbelly where they assume everyone is sharing and offer multiple small plates) Consider it an opportunity to do a little splurging and dollar-cost averaging at the same time, so you can eat at a high-end place without completely breaking the bank.
Last year, rather than just say "Here are 10 places to go for Miami Spice," I plotted out a "Week of Spice" - seven actual lunches and dinners that I'd want to eat from the universe of Miami Spice menus. Even though I didn't actually eat all those meals, I still like the format, and will do it again here. Once again, these are not the complete menus of any of the places listed, only the things I thought sounded most interesting. And once again, I've not actually tried any of these menus yet, so caveat emptor, etc. (though for the most part these are restaurants I know and would generally trust).

Ten Great Things to Eat in Maui
While starting to mull over potential destinations for the upcoming summer, it occurred to me that I never really reported back on last summer's trip to Hawaii. Though this was not a trip centered around dining, we do always look to eat well, and it was actually just a bit of a challenge in Hawaii. Not for lack of good food; but as someone who lives in Miami Beach, I know from experience that when you're in an overwhelmingly tourist-driven destination, it can be tough not to eat like a tourist.
Honolulu seems to be the epicenter of interesting dining in the Hawaiian islands - crazily ambitious projects like Vintage Cave, refined tasting menus like Chef Mavro, pop-ups like The Pig and the Lady. That's not a surprise, given that it's the most populated city. But for non-culinary reasons, we elected to skip Oahu entirely in favor of Maui and Big Island.
The good news was that locavorism seems to run strong on all the islands. It ought to: Hawaii has ready access to a fantastic variety of fresh fish straight from the ocean, as well as great locally grown fruits and vegetables. And over the past couple decades, there's been an increasingly concerted push to incorporate those ingredients into the restaurant repertoire, instead of relying on flown-in products.
Still, there's a huge gulf between the resort restaurants catering to the "haole" (foreigners), and the local joints with their loco moco and spam musubi (which we ate, and which was good, but there's only so much of that my Crestor can handle), and it's not always so easy to find the middle. But that's what we were looking for; here's what we found:
1. Fried Saimin at Star Noodle (Lahaina). Star Noodle was exactly the kind of place we were seeking out. Located in a business park well off the main drag, it felt more like a locals' hangout than a tourist trap. The menu, from Chef Sheldon Simeon (yes, the guy who was always wearing the "Where's Waldo?" hat on last season's Top Chef, and who also was a 2011 James Beard semi-finalist for Rising Star Chef and Best New Restaurant) was a happy hodge-podge of pan-Asian noodle dishes and other items, done with some contemporary flair.
From what I've read, saimin is arguably the "national dish of Hawaii" - ramen-style wheat noodles, either in a broth or pan-fried, often coupled with that other Hawaiian staple, Spam, as the main protein. Star Noodle's Fried Saimin hewed pretty close to tradition, the chewy noodles tossed with slices of Spam and kamoboko (fish cake), thin ribbons of cooked egg, bean sprouts and green onions. They were the best of the noodle dishes we tried there.[1] An assortment of pickled vegetables, seaweed salad, kimchi, and Momofuku-style pork buns rounded out the meal.

2. Ahi Poke Shoyu at Safeway (Lahaina). Safeway? Really? Yes. As unlikely as it sounds, a Chowhound thread tipped me off that the Safeway in downtown Lahaina has a remarkably good selection of pokes. And sure enough, in the seafood market they had about a dozen different varieties of the Hawaiian marinated fish dish. Though most were made with frozen, thawed fish or octopus, a couple were made with fresh ahi tuna, including this one laced with soy sauce and sesame oil, chiles, onions, scallions and masago.
3. Reuben Sandwich at Leoda's Kitchen and Pie Shop (Lahaina). Maybe it was that we'd just spent the morning kayaking and snorkeling off the coast in Olowalu Village, and were starving. But in the moment, anyway, I've found few sandwiches as satisfying as the Reuben I had at Leoda's Kitchen, another place opened by Sheldon Simeon. Layers of shaved corned beef, oozy Swiss cheese, sauerkraut and thousand island dressing piled onto thickly sliced, griddled rye bread - what's not to like? The single-serve macnut-chocolate praline pie was a winner too.

4. Shave Ice at Ululani's Hawaiian Shave Ice (Lahaina). You can get shave ice all over the islands - and we did - but the best we had was at Ululani's Shave Ice in downtown Lahaina. Unlike the typical, treacly day-glo syrups that look and taste like nothing from the natural world, Ululani's flavors its powdery, freshly shaved ice with all natural syrups made in-house, many from the plethora of tropical fruits that are available locally. Little Miss F opted here for green tea and lychee. I was partial to mango with li hing mui powder (salted dried plum), which became something of an obsession for me during our time in Hawaii.[2]

(Miami) Spice of the Week
I've missed the first few weeks of Miami Spice season while on vacation, and frankly, after two weeks in Hawaii, could use some bargain dining. We go over this every year here at FFT, so here's the short-form version of my "Spice Rules":

(3) look for food that actually interests you. If a restaurant doesn't excite you the other ten months of the year, it is unlikely there's going to be something really inspiring on their Spice menu.
The Miami Spice format is a bit different this year. There are now two categories: "Luxury Dining" and "Fine Dining," with different price points: $23 lunch / $39 dinner for "Luxury Dining," and $19 lunch / $33 dinner for "Fine Dining." And if you can remember which is which five minutes from now, you're smarter than me.[1]
I decided to do something a little different myself this year as well. I set out to see if I could come up with a "Week of Spice" - a Spice lunch and dinner for each day of the week that satisfied my "Spice Rules." Then for the real bargain hunters, I've added for each day an alternate dinner choice in the lower-priced "Fine Dining" category.[2]
Not that I would actually do this: I sure don't need to eat two desserts every day, nor do I really need to spend $60+ on restaurant meals every day. But it was a good exercise in picking what look like the seven best lunch and dinner menus being offered, including on Fridays and Saturdays (when some places have elected not to offer their Spice menus).
This is not a complete listing of each restaurant's menu (and menus change regularly anyway), just my personal picks of what sounds best. These are not listed in order of preference, and indeed some of the best are saved for the end, so I'd encourage you to wade your way all the way through.

I don't care if Monday's blue ...
Miami is not exactly at its most charming in the summmer: the constant 90°+ heat and sweltering humidity can wear just about anyone down. But for those of us who stick it out year round here, there are at least a few good things about summer. There's mango season, for one. And there are the dining specials, designed to bring the locals out from their air-conditioned caves until the tourists come back in the fall.
We're still a month away from Miami Spice season, but there are already enough restaurant specials to fill out nearly the full week of dining. Consider:
Monday - It's not quite every week, but Sugarcane Raw Bar Grill has been using Monday nights to host a "Dinner with Friends" series of guest chef events. Chef Timon Balloo has already teamed up with Jamie DeRosa (Tudor House), Paula DaSilva (1500°), Lee Schrager (SoBeWFF), David Bracha (River Oyster Bar), Dean Max (3030 Ocean), and Dena Marino (MC Kitchen). Coming up next: Cesar Zapata (The Federal) on Monday July 23, and Clay Conley (Buccan) on Monday August 27. Reservations open up on the 10th of each month, priced at $110 including beverage pairings. Tuesday - Every Tuesday through the summer, it's "Bourbon, Beer and Q" night at The Dutch. Each week they will be featuring a different genre of BBQ, with a spread of several mains and sides for a fixed price of $30 (excl. tax, tip and beverages), plus $3 PBR tallboys and $22 pitchers of cocktails. This coming Tuesday, July 3, is Memphis-style, with dry-rubbed baby-back ribs, whole roasted and smoked BBQ turkey breast, and BBQ spaghetti with pork shoulder,[1] plus fried pickles, corn on the cob, and brown sugar sweet potatoes. Every week will bring a different style, with St. Louis, Carolinas, and Korean in the pipeline.

BGR The Burger Joint - Coral Gables
Some people ask me why there aren't more negative reviews here at Food For Thought. Or, to put it another way, they give me grief because I like most of the places I write about. I think most of my commentary is balanced: I'm not a cheerleader, and even most positive write-ups will offer some criticism too. But it's true that I don't often outright pan restaurants here, even though those kind of rants can be the most fun to write (and read).
Why is that? There are a few reasons. First, I see it as my primary mission to help people find good things to eat. The easiest way to do that is to write about good restaurants. Yes, I could also write about bad restaurants and warn people away from them, but that kind of process of elimination seems rather inefficient.
Equally, if not more important: I like to eat good things. I really hate having a lousy meal. And as a rather dedicated eater, one of the things I've learned to do pretty well is to figure out how to avoid them. Here, there definitely is a process of elimination at work. If I look at a menu online, I can pretty quickly tell if there's nothing that's going to interest me (for instance, yet another generic Italian menu or another uninspired steakhouse will not be a draw). Another tell: if a restaurant just opened their first location and are already trying to market franchise opportunities on their website, that's a good sign that they're more about business than food.
So I've gotten pretty good at "advance scouting," and while some restaurants may not live up to expectations, I'm generally pretty successful at avoiding outright bad meals (unless, as inevitably happens sometimes, I don't get to choose the place).
And finally, I am not a professional critic. Nobody's paying me to do this. I won't typically write up a restaurant unless I've visited multiple times, and if I've had a bad experience, there's usually not much reason for me to go back and repeat it.
All of which is a very long preface for this: I did not like "BGR The Burger Joint."

Miami Food Trucks Keep on Trucking
A year ago, Miami had only barely caught on to the food truck trend that already was sweeping New York, Los Angeles, Portland and several other cities. It was late 2009 when the trucks started rolling here - first Latin Burger, then very shortly after, the gastroPod. Now, only a bit more than a year later, there are more than 50 trucks on the road or about to launch (you can follow all of them on this Miami Food Trucks twitter list I compiled, or check Burger Beast's Street Food Locator).
Though some people were ready to dismiss the food truck phenomenon as a goofy and ill-fated trend like pet rocks, white-rimmed sunglasses, or jeggings, the turnout at recent gatherings like the Biscayne Triangle Truck Roundup ("BTTR") Tuesday at the Johnson & Wales North Miami campus, and Street Food Fridays at the Adrienne Arsht Center, would suggest it has staying power. These events, where as many as 20 trucks set up shop, and which lately have included additional amenities like tables and chairs, porta-potties, and live music, seem to have been a real win-win deal for truckers and their customers, with hundreds of people coming out and almost all of the trucks doing brisk business. It's been busy enough that some of the truckers have started expanding - gastroPod and Sakaya Kitchen (Dim Ssam a Gogo) both are adding second vessels to their fleets.
Indeed, one of the biggest problems facing the food trucks lately is not finding customers, but finding places to operate. Both Miami-Dade County and the City of Miami have recently started cracking down on some food truck gatherings, though their rules and policies remain ill-defined and inconsistent. In the meantime, events like BTTR, the Wynwood Food Truckers Meetup, Street Food Fridays and others have still managed to go forward, and trucks continue to find places to do business.
While I've welcomed the food truck invasion, I've also been concerned at times with the quality and the variety - or lack thereof - available. For a while, it seemed like every new truck hitting the road was doing burgers, or tacos, or both.[*] Now it's true that everyone who has a soul loves burgers and tacos, but I had my doubts that Miami really needed twenty, or forty, trucks all serving the same things. But lately the mix has improved. I can't claim to have tried anywhere close to all the new offerings out there, but here are some thoughts on a few. Eat Basel - Where to Eat for Art Basel
It's that time of year, when culturati from all over the world, like the swallows of Capistrano, descend upon Miami for Art Basel. There will be plenty of sources for information on art installations, events and parties: New Times has a comprehensive list of Art Basel events as well as a guide to the satellite art fairs, and the New York Times just published a more curated list. And though we've danced around the food as art question here occasionally, right now let me address the issue in a more pedestrisn fashion: where should you eat?
South Beach / North Beach
The Art Basel exhibition itself is in the Miami Beach Convention Center on South Beach. The good news is that from the Convention Center, you'll be in easy walking distance of the Lincoln Road pedestrian mall. The bad news is that there's hardly anyplace good to eat on Lincoln Road any more. If you must, consider Meat Market for a contemporary take on the steakhouse genre, or for smaller budgets, the new Shake Shack (my Shake Shack review here) in the Herzog & de Meuron designed building at 1111 Lincoln Road. Otherwise, keep in mind that any place with saran-wrapped food and the hostess' bodacious cleavage on display out front generally is not worth eating at.
But all hope is not lost. South Beach has several promising new additions within about a mile of the Convention Center. The recently opened Pubbelly is an "Asian-inspired" (read "Momofuku-inspired") gastropub which brings the contemporary casual Asian meme to South Beach. Eden, in the late (and missed) Talula space, features a menu designed by New York chef Christopher Lee and a gorgeous outdoor patio space.[*]
For the high rollers of the art world, the Wolfsonian Collection is hosting a special event dinner on December 1 in conjunction with a site-specific installation, "Seduce Me," by actress/filmmaker Isabella Rossellini. While "Seduce Me" explores the mating rituals of various animals, big name chef Jean-Georges Vongerichten will be doing the cooking, Robert Mondavi Winery will be pouring the wines, and Bulgari will be providing a special Rossellini-designed handbag and a watch for a post-dinner auction. Tickets are $1,000 (!); more information can be had from Michael Hughes at 305.535.2602 or michael@thewolf.fiu.edu.
If it's some local flavor you want, try one of Chef Douglas Rodriguez's venues, each of which takes a slightly different spin on contemporizing Latin American cuisines: Ola at the Sanctuary Hotel, the most pan-Latin of his restaurants (and also the closest to the Convention Center); De Rodriguez Cuba (my De Rodriguez review), in the Astor Hotel, for updated versions of Cuban classics; or the newly opened and seafood-focused De Rodriguez Ocean, on the south end of Ocean Drive. Or for something more casual and funky, there's Tap Tap, South Beach's only Haitian restaurant.
But if you want to really want to do South Beach like a local, consider a few more options: Altamare (my Altamare review), on the quiet western end of Lincoln Road (across Alton Road), is a local seafood specialist, and the menu has gotten more interesting and diverse since Michael's Genuine alum Simon Stojanovic took over the kitchen. Indomania (my Indomania review) is a hidden gem of a place, just a little bit north of South Beach proper on 26th Street, but worth the trek for their fun, flavorful Dutch-Indonesian food (the rijsttafels come with more than a dozen different dishes). And if you're up late and hungry, you'll be better off ignoring Anthony Bourdain's recommendation of T-Mex Cantina (f/k/a San Loco); it's not his fault, I'm sure he just had one too many at Club Deuce and his judgment was impaired. Instead, head over to the The Alibi, tucked away in Lost Weekend, a divey bar on Española Way, for their Philly Cheese Steak (on an authentic Amoroso roll) or a shrimp po'boy, with a side of hand-cut fries with Ranch Dust (open till 5am).

American Noodle Bar - Miami, FL - First Look

I drive down Biscayne Boulevard to work every morning. As a result, I have been a spectator, on a daily basis, to the drawn-out opening of American Noodle Bar. In fact, I recall when the first sign went up on a small space in one of the dodgy, 1950's era "MiMo" style hotels along Biscayne, it was for something that was going to be called "Pineapple Express" and promised an opening date of "January 2010." The name changed. And so did the projected opening date, which dragged out for months.[*]
American Noodle Bar finally opened Wednesday night. I usually avoid opening nights; I also usually like to give a place a few visits and at least a few weeks, sometimes months, to find its footing before writing. But the lengthy period of anticipation left me eager to try it, and to provide a long-awaited "first look." (I also feel incredibly guilty that it seems like it's been months since I've written about a Miami restaurant).
The chef behind American Noodle Bar is Michael Bloise, a StarChefs "Rising Star" who is best known for his work at Wish on South Beach. His new project is something very different. The space is a tiny wing of the Biscayne Inn motel, into which he has squeezed one large communal table, a line of counter seating along one wall, and an open galley kitchen along the back wall. It's a got a funky, DIY aesthetic, with bonzai trees on the table and a bamboo tree print on the wall providing the primary decoration. There is also outdoor seating in front facing Biscayne Boulevard. (For those looking to get their bearings along Biscayne, it is right next door to Kingdom, and I suspect you can smell their burgers grilling from the outdoor seats). Service is semi-fast-food style: order at the counter, and they'll bring it out to your seat when it's ready (right now, at least, in plastic bowls and cardboard boxes, though I'm not sure if that's intended as a permanent state of affairs or just an opening week thing).
The menu at American Noodle Bar is superficially simple, but actually presents many more choices than might be immediately apparent. The focus - no surprise, given the name - is on noodles, though presently of only one variety. A bowl of noodles can be had for $7 with a choice of one sauce and one "add-on." But here's where things get complicated: there are nearly ten sauce options, and just as many "add-ons" (a couple vegetable options but mostly various proteins). Additional "add-ons" can go in the bowl for another $1 each.
There were so many possible to directions to go: if I spent less time focusing on food and more on math, I could maybe tell you how many. Nearly paralyzed by the seemingly limitless combinations, for my inaugeral meal, I had a bowl with sriracha butter for a sauce, and roasted duck and Chinese sausage for the "add-ons." The noodles (I did not ask questions as to their provenance, though I'm curious; I doubt they're made in-house) were of a lo-mein style variety: a bit thicker than a typical ramen noodle, but with that slightly springy texture, versus the more supple smootheness of an Italian pasta. They were hearty and pleasing, but on their own, nothing to get too excited about: it's really the sauces and toppings that will make or break things.
